Chicken Tortilla Soup (Slow Cooker)

Ingredients
• 1 lb. bone-in chicken with skin and excess fat removed
• 1 onion, diced
• 3-4 cloves garlic, minced
• 2 jalapenos, seeded and inside ribs removed, finely diced
• 4 c low-sodium chicken broth
• 1 sweet bell pepper, chopped
• (opt) 2-3 banana peppers or poblano peppers, seeded, cleaned and diced – only if you like it a bit hotter. (Note: You can char peppers, and steam in bowl, covered, then remove skin, chop and add to soup to mellow flavor. Or, you can also add in 3 roasted red peppers, chopped, to the soup if you’d like.)
• 1 (14.5-ounce) can fire roasted diced tomatoes
• 1 (14.5-ounce) can black beans, rinsed and drained
• 1 c frozen corn
• 1 T sugar or agave nectar – use to cut acidity so add as needed
• 1 t cumin
• 1 t cayenne
• 1 t ground coriander
• 1 T chili powder
• ½ t thyme
• 1 t oregano(Mexican is ideal but Greek is fine)
• 1 lime, juiced and zested, plus wedges for garnish
• Salt and freshly ground black pepper

Options for garnish:
• 1 cup roughly chopped fresh cilantro leaves
• 1 avocado, pitted, sliced
• 1 c ff sour cream
• 1 cup shredded Monterrey cheese
• Sliced scallions
• Crushed tortilla chips or fried tortilla strips

Directions
Put all in crock pot, saving stock for last and adding as needed. If you’d like, you can combine everything but the chicken in the crock pot bowl and place it covered in the fridge overnight so the flavors can marry. Cook on low 4-5 hours. Remove chicken when cooked through and allow to cool as the soup continues to cook. Add more stock if needed. Add chicken back in about thirty minutes before serving. Garnish as desired and enjoy!

  1. It's a crock pot. :) They are a gift from the gods. Like bacon, but not edible.

  2. I had to google it, never really understood what they were. Hm. Can you make it if you own, like, big saucepans? None of them fancy gadget things. I have a cast-iron pot though.

  3. The cast iron pot would work! Just throw it all in, cover it up, and cook on low in the oven for several hours, until the chicken is properly cooked through.
